WHere is a simplified version of a beverage found on the seasonal cocktail list. It's a batch premix that's bursting full of essence of the holiday season, which makes it ideal for your celebration. Reserve the remaining syrup you can use for brunch beverages, puddings, or to make additional servings of the drink.
The Bikini Cocktail
Serves 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Combine the listed ingredients in a pot, heat until it reaches a light boil, agitating to dissolve. Then, turn off the heat and let it to cool completely. Pour into an sterilised bottle, seal and refrigerate it in the refrigerator, it can be stored for around one month.
For the Premix: Pour the specified liquid ingredients into one large bottle, allow it to infuse for one hour, then strain best through muslin, making it completely strained.
For serving: Measure 85ml from the premix into a mixing glass packed with ice, gently stirring gently for one minute to cool it down. Strain into an frosted cocktail glass or similar, garnish with some cranberries adding the final touch using a quick spritz of the essential oil over the top.
